Cookie Nachos: Fat & Weird’s Wildest Build-Your-Own Dessert Yet
Episode 19: Cookie Nachos
By Bake It With Fat and Weird – A DIY dessert adventure, no rules, just chaos.
It’s nacho average dessert, y’all. This week on Bake It Fat & Weird, Brad and Aubrie ditched the rules (and recipes) in favor of pure, unfiltered fun with a nostalgic, customizable twist: Cookie Nachos. The concept? Bake up cookie "chips," load them with your favorite sweet toppings, and dig in like dessert was meant to be finger food.
No format. No flavor limits. Just organized chaos.
The Concept: Cookie Nachos
This is a choose-your-own-adventure dessert—think classic nachos, but instead of tortilla chips, you’re working with crispy cookie triangles. Instead of queso, think marshmallow fluff. Instead of jalapeños, maybe… peanut butter chips?
Brad and Aubrie each made their own version, complete with drizzles, scoops, candy chunks, and flair. No surprise, Brad’s had peanut butter in every form imaginable, while Aubrie brought the birthday party energy with rainbow sprinkles and marshmallow madness. And just like real nachos, these were messy, sweet, and best eaten with your hands.
And in true Fat & Weird fashion, it wasn’t about the recipe—it was about the ride.

How to Make Cookie Nachos
1. Cream the Fats & Sugars
In a large bowl, cream together butter, shortening, granulated sugar, and brown sugar until light and fluffy.
2. Add Wet Ingredients
Mix in egg, vanilla extract, and vegetable oil. Blend until smooth.
3. Mix in the Dry Stuff
Add baking soda, cornstarch, and salt. Stir until evenly incorporated.
4. Add Flour
Gradually stir in flour to form a cohesive dough.
5. Shape into "Chips"
Roll dough out to about ¼ inch thickness. Cut into triangle shapes using a pizza cutter or sharp knife.
6. Bake 'Em
Place cookie triangles on a parchment-lined baking sheet. Bake at 400°F (190°C) for 9–11 minutes, until edges are golden. Cool completely.
7. Build Your Nachos
Arrange cookie chips on a large platter. Drizzle generously with your toppings of choice.
8. Optional: Broil for Gooeyness
Pop the loaded nachos back under the broiler for 2–3 minutes to get everything nice and melty. WATCH CLOSELY.
