Episode 4: How Building Our Dream Headquarters Almost Broke Us
In 2021, after years of explosive growth, we finally built the headquarters we had dreamed about. But what felt like the ultimate milestone almost broke us. Episode 4 of our journey dives into the highs, the lows, and the unexpected turns that came with scaling Fat and Weird Cookie into something much bigger than ourselves.
From a Tiny Kitchen to a 7,500-Square-Foot Headquarters
In the previous episode, we were drowning in demand, trapped in a thousand-square-foot kitchen that we had long outgrown. Every day, the lines got longer, the orders piled higher, and the pressure to deliver grew.
The solution was simple in theory but monumental in execution: we needed more space.
In January 2021, we took the leap and moved into a 7,500-square-foot facility—our very first real headquarters. For the first time, we had space to breathe, room for new equipment, and a team that could finally work efficiently without bumping into each other.
It was exhilarating. For the first time, Fat and Weird Cookie felt like a proper, scalable business.
Opening Our Storefront: A Sweet Milestone
Just a few months later, in May, we opened our very first storefront. Seeing people walk in, tasting cookies fresh out of the oven, and sharing in the joy we had created was a surreal experience.
Opening a physical location was not just about sales. It was about brand experience. Customers could see our team in action, feel the chaos and creativity of cookie-making, and engage with our story firsthand.
But the reality behind the scenes was far from perfect.
The Hidden Struggles of Expansion
Scaling is rarely a straight line. Every win seemed to come with two setbacks.
-
Construction Delays: Our move-in schedule was pushed back repeatedly, creating operational bottlenecks.
-
Cost Overruns: Every budget estimate was shattered. Equipment, permits, and unexpected labor costs piled up faster than we could track.
-
Equipment Failures: Expensive machinery arrived broken or failed to perform as promised, forcing constant troubleshooting.
Despite these challenges, the team kept moving forward. We learned quickly that growth requires patience, resilience, and relentless problem-solving.
Planning for More: The 2,500-Square-Foot Addition
By November 2021, it became clear that even 7,500 square feet would not be enough.
We began planning a 2,500-square-foot addition, bringing our headquarters to a full 10,000 square feet. This expansion allowed us to accommodate a growing team, streamline operations, and prepare for new initiatives that would take Fat and Weird Cookie to the next level
Cookie Fest: Breaking Records and Building Community
One of the highlights of this period was hosting our first big public event: Cookie Fest.
Our audacious goal? To break the Guinness World Record for the most cookies dunked in milk at the same time.
We came close, just a few hundred people short, but the experience was unforgettable. The event reinforced something crucial: our growth was not just about numbers or sales. It was about community, joy, and shared experiences.
The Unexpected Slowdown
After years of rapid expansion and explosive sales growth, 2022 brought an unexpected challenge. Orders began to slow down.
For a team that had been used to rapid scaling, this was alarming. We had weathered construction setbacks, budget overruns, and operational chaos, but now we faced the invisible challenge of market saturation, changing consumer habits, and natural business cycles.
A Phone Call That Could Change Everything
Just when we were bracing for a tough year, the phone rang. On the other end was an offer that could transform Fat and Weird Cookie forever.
We were faced with a choice: continue on the path we had built painstakingly over the years, or pivot into a new opportunity that promised growth, exposure, and resources we could only dream of.
This moment marked a turning point, reminding us that in business, the biggest breakthroughs often come after the toughest trials.
Key Lessons from Episode 4
-
Growth is messy: Expansion is never linear. Every milestone comes with challenges that test your resilience.
-
Invest in infrastructure early: Space, equipment, and systems are critical to sustain long-term growth.
-
Celebrate wins, even imperfectly: Cookie Fest was a near-record failure in numbers but a massive win for brand loyalty.

Expect the unexpected: Market slowdowns and operational challenges are natural parts of scaling a business.
-
Stay open to opportunities: The right partnership or offer can dramatically accelerate your growth when timing aligns.
